Dear Di-ary….

Question: What is your favorite sweet to make or bake?

You all know that I love to bake.  My mom and I baked together from when I was very young.  She was always making homemade desserts….cakes, cookies, pies, tapioca pudding, rice pudding etc.  Not only did we enjoy making them but we loved eating them too!  

I have many favorite sweets that I enjoy making!  I guess my favorite “easy” dessert would be brownies.  I usually use Aldi’s “Live G Free” Gluten Free Brownie Mix because it is fast, easy and delicious!  I add chocolate chips or nuts to make them even more decadent!  And if you have company coming you can mix it up, put it in the oven and serve it warm.  Oh so good!  On the back of the box there are directions for the Brownies and also Chocolate Chip Brownie Cookies.  I have used the Chocolate Chip Brownie Cookie Recipe and instead of making regular cookies with it I baked it in my round Pizza Pie Pan and made one BIG giant cookie like you see in the grocery store or bakery and it comes out AMAZING!  I followed the directions on the back of the box but just made the one big giant cookie.  Also, I will add extra chocolate chips and M & M’s on top when I take it out of the oven to make it even better!   After it has cooled completely I sometimes make vanilla icing and pipe it around the edge of the giant cookie just like they do in the store/bakery.   It is a wonderful dessert especially if you are going to a party or event and want to bring something special….it is very impressive and delicious!!!

My other favorite sweet to make is Italian Rum Cake!  I don’t make it often because it is time consuming but certainly worth the effort. It isn’t really hard to make but there are a lot of steps and it takes a few days to make between baking the cake, making the fillings and whipped cream icing and then putting it all together.  It is basically a sponge cake that is filled with chocolate pudding on the bottom layer and chopped nuts on top, the next layer is vanilla pudding with chopped up maraschino cherries on top and then the whole cake is iced with homemade whipped cream icing.   After it is iced chopped nuts are put on all around the side of the cake.  OH!  I almost forgot…..before you put the pudding on each layer of sponge cake it is sprinkled with rum, amaretto, or whiskey (whatever your favorite is or you have in your house.) You can use a little or a lot, or even omit it if you prefer.  It is not a sweet cake like a regular birthday cake with all that icing….this is a light cake with delicious pudding filling and whipped cream icing!!! 

My mom taught me to make this when I was young.  We loved it and whenever I make it it brings back so many wonderful memories!  Whatever your favorite dessert is take the time to sit down and share it with someone you love!!!!
